These pancakes come out super fluffy and light. They are so good my kids will eat them without syrup! This Easy Homemade Pancake Recipe is perfect for Saturday morning breakfast or even breakfast for dinner!
Ingredients for Easy Homemade Pancakes:
1 ½ Cups of all-purpose flour 3 ½ Teaspoons Baking Powder 1 Tablespoon white sugar 1 ¼ cup of milk or buttermilk 1 egg 3 Tablespoons butter, melted 2 tablespoons Pure Vanilla 2 Teaspoons Cinnamon
Warm up your electric skillet or frying pan:
Preparation time: 5 minutes
I use an electric skillet because there is more room so I can cook about 8 – 10 pancakes at one time
A regular frying pan will be fine
Set heat to medium and let it warm up while you prepare your batter
Mix your pancake batter:
Preparation time: 5 Minutes
In a mixing bowl, combine the flour, baking powder, sugar, cinnamon
Mix together the ingredients
In the center of the dry mix create a well with your fingers
Pour in the mil and/or buttermilk, egg, vanilla and melted butter
Mix the ingredients together until smooth, using a whisk
Cook the pancakes:
Cook time 8-10 minutes
Fill a ¼ cup measuring cup and pour one little circle on the skillet
Fill the cup again and pour another circle of batter about 2 inches away from the first circle
Let them cook for about 3 minutes
Use a spatula to flip the pancake over and let cook another 3 minutes
If the pancake is not brown enough flip it back over and let brown a little longer
Don’t overcook the pancakes, should not need more than 8-10 minutes to cook through
Pull the pancakes off in the same order that you placed them on
Make another round mmm mmm!
Tip: Keep the pancakes warm after you take them off by placing inside tin foil and covering them up

Important notes for you:
I have made this recipe with both buttermilk/milk mixture and just milk. I will say the buttermilk really improves the texture of the pancakes, thickens it up a little and makes for a denser pancake. However, they are phenomenal with just milk and my kids will eat them without syrup they are so good.
The cinnamon and vanilla are optional but add an amazing flavor to the pancake
I have also made these with fresh blueberries and chocolate chips
When using fresh blueberries – always add them in at the last minute otherwise they could get crushed
