Easy Peanut Butter Kiss Cookie Recipe

This is a recipe for easy peanut butter cookies and they are really, very easy! These cookies come out soft with a combination of peanut butter and chocolate. Now this is a cookie you won’t want to miss out on!

Ingredients for easy peanut butter kiss cookies:

2 3/4 Cup White Flour
1 Teaspoon Baking Soda
1/2 Teaspoon Baking Powder
1 Cup (2 stick) butter, room temperature
1 1/2 Cups white sugar
2 Large eggs
1 Teaspoon pure vanilla
1 Cup of creamy peanut butter
1 Bag of Hershey’s chocolate kisses (I like the Milk chocolate, but use which ever flavor you want!)

What cooking utensils will I need?

One medium mixing bowl
Spatula
Cookie sheet(s)
One large mixing bowl and hand mixer
Or
Stand mixer

First thing to do:

Preheat oven to 375 F
Lay out cookie sheets
Unwrap the number of Hershey kisses (approximately) that you are going to use
Place in a small bowl and place in your freezer

Prepare the peanut butter cookie batter:

Preparation Time: 15 minutes

In a medium mixing bowl, add flour, baking powder and baking soda
Mix dry ingredients slightly with spatula
In large mixing bowl or stand mixer bowl, add butter and sugar
Cream together (mixing speed at medium) until light and fluffy
Add eggs and vanilla
Mix together well
Using the spatula scrape down the sides of the bowl
Slowly mix in the dry ingredients (about 1/4 of your dry mixture at a time)
Mix in the peanut butter
Use a teaspoon to scoop a little of the batter out into your hand, about the size of a small golf ball
Roll the batter into a ball
Place the dough ball on cookie sheet (keep the batter balls about 2 inches from each other and the sides of the sheet)
Note: On my large cookie sheet, I can fit 12 cookie dough balls
Bake in preheated oven at 375 F for 8-10 minutes
Pull the finished cookies out of the oven and place on hot pad
Take the Hershey kisses out of the freezer and gently press one in the middle of each cookie
Let cookies cool for 2 minutes, scrape the cookies off and place on a cooling rack

Important notes for you:

Baked goods continue to bake for an additional 2-3 minutes after you remove them from the oven. My recommendation: I bake for 7 minutes on this recipe and they come out perfect! The perfect easy sugar cookie recipe!

Recommendation: Use at least two cookie sheets when baking so as you pull one out of the oven you can place the next in right away – no need to wait for your first cookie sheet to cool down!

I always double this recipe as it is a favorite

You do not have to freeze the Hershey kisses, however I have found that there is less melting of the kiss when you place a chilled chocolate piece on the top of the super hot cookie!
